This dessert is a great way to use up slightly stale bread.Beat 2 eggs, 50g sugar, 20cl full fat milk and a couple of drops of vanilla essence. The recipe uses a sachet of sucre vanille but vanilla essence will work just as well. Dip 8 slices of slightly stale bread into the mixture ensuring the slices are covered on both sides. You can also use slices of brioche. Melt 30g of butter in a frying pan and fry the bread on both sides until golden. You'll need 300g of raspberries but set some aside for decoration. Add 30g sugar, 200g Mascarpone cheese and 100g fromage frais to the raspberries. Mix together and spread onto 4 slices of the prepared French toast. Place the remaining slices on top to make 4 'sandwiches'. Decorate each dessert with the remaining raspberries and dust with a little icing sugar. Serves 4 people.

My son would love this, I used to make brioche but I wouldn't know how now, it is very tricky, took me a while to get the knack from a covetous French chef!
